Sanglier Noble has been charming guests since its debut in 2013. This 2023 vintage is exciting and we are pleased to introduce you to this wine. In French, sanglier means “wild boar”, and our “noble boar” is a playful nod to the geological backbone of our home here on Hogback Mountain. A polished blend of Cabernet Sauvignon and Merlot from top vineyards in California and Washington, this wine pours a deep garnet hue and greets you with aromas of blackberry, blueberry, dark plum, and just a whisper of rose petal. Take a sip, and you’re met with waves of cooked blueberry, a tease of licorice, zippy acidity, and an earthy undertone that ties it all together. The finish? Buoyant and long, layered with crushed blackberry, dark fruits, and a richness that lingers like a good story. Merlot brings a plush softness to the structure, while aging in both French and American oak lends subtle spice and those silky, classic tannins we all crave. Pair it with the hearty and the bold: lamb shank, veal chops, roasted pork, rich pastas, or that favorite sautéed sausage and peppers. Want to go veggie?
