    Crisp and Bright! Enjoy as Apple Blossoms Dance Across the Palate.

    Our Wild Boar Blanc de Blancs is a classic Burgundian bubbly made in the traditional méthode champenoise style. This wine spends 18 months on the lees developing notes of brioche, white flowers, and white peach on the nose. A wonderful acidity pervades the palate as apple blossoms dance around a textured mouthfeel. Blanc de Blancs is the perfect wine for toasting celebrations and to enjoy as an apertif, but don’t count it out for at the table too – it’s crispness and bright acidity makes this wine a perfect pairing for a huge vairety of foods.

    Rich in texture, yet refreshing and crisp

    In French, Blanc de Noirs translates to “white of black,” and the moniker is used when white sparkling wine is produced from black grapes. Blanc de Noirs often showcase a bit more body and fruity fleshiness than sparkling wines made of white grapes, and this example is no exception. A product of the Huber’s connection to Burgundy, France, our crémant is rich in texture, yet refreshing and crisp.  A perfect wine for any celebratory toast or to enjoy in the company of family and friends. Pour as a welcome drink to your next dinner party to start the evening off right!

    At Stone Tower, the term “Reserve” is not used lightly – it represents the harmonious marriage of exceptional vineyard fruit and the meticulous craftsmanship of our winemaking team. This Merlot stands proudly as a true embodiment of that title – a shimmering example of what it means to be called a Reserve. In the glass, the wine dazzles with a lovely garnet hue encircled by a delicate rose-tinted halo. The bouquet is rich and inviting, bursting with vibrant notes of black cherry, a whisper of anise, and a reminiscence of coating on a candy apple that promises something special even before the first sip.   • 2023 Wild Boar Cellars Sanglier Noble

    Californian style blending the world’s two most popular red varietals

    Sanglier Noble has been charming guests since its debut in 2013. This 2023 vintage is exciting and we are pleased to introduce you to this wine. In French, sanglier means “wild boar”, and our “noble boar” is a playful nod to the geological backbone of our home here on Hogback Mountain. A polished blend of Cabernet Sauvignon and Merlot from top vineyards in California and Washington, this wine pours a deep garnet hue and greets you with aromas of blackberry, blueberry, dark plum, and just a whisper of rose petal. Take a sip, and you’re met with waves of cooked blueberry, a tease of licorice, zippy acidity, and an earthy undertone that ties it all together. The finish? Buoyant and long, layered with crushed blackberry, dark fruits, and a richness that lingers like a good story. Merlot brings a plush softness to the structure, while aging in both French and American oak lends subtle spice and those silky, classic tannins we all crave.   • 2024 Petit Verdot

    Bold yet beautifully refined, this Petit Verdot balances dark fruit, floral aromatics, and silky tannins in a wine that lingers long after the final sip.

    This single-varietal Petit Verdot comes out of the gate with an air of confidence. Beginning with the nose exhibiting a mélange of blackberry, plum, sage, and violet, it has a sultry seductiveness and embraces you before the first sip. On the palate, the seduction continues with blackberry, plum, sage, violet, and coriander. This wine hugs you and it will be hard to break away. The embrace continues with the finish, incredible softness, tannin generally not seen in single varietal Petit Verdot.

    Layered and sophisticated Right Bank Bordeaux-style blend

    Wind Swept Hill is one of our signature wines, artfully crafted in the spirit of a Right Bank Bordeaux. This vintage is led by Cabernet Franc, supported by Merlot and a touch of Petit Verdot. As with all our vintages, it’s made from the vineyard’s best “first fruit” – a true expression of the season. Hold your glass to the light, and you’ll see a stunning, almost purple hue with a delicate garnet halo. The bouquet is luscious, offering notes of black raspberry, a whisper of butter toffee, and mocha cream. On the palate, expect that same creamy texture layered with rustic wild fruit and subtle, sophisticated softness. The finish is vibrant yet silky, with echoes of mocha and toffee that linger beautifully. This vintage is wonderfully balanced with a plush texture and soft, medium tannins that will evolve gracefully with age. As the wine matures, the tannins will soften even more, adding further depth and elegance. Windswept Hill is a food lover’s dream.     A graceful and spirited character, expressive with bold fruit, and soft yet full tannins

    Our fourth single-varietal Estate Cabernet Sauvignon is a testament to refinement. With only a limited yield, much of this cherished varietal enriches our Hogback Mountain blend and Reserve Cabernet Sauvignon. This single varietal, is comprised of 92% Cabernet Sauvignon and elegantly accented with 4% Cabernet Franc and 4% Petit Verdot. The wine captivates from the first encounter with a handsome garnet color. On the nose, it is sumptuous and brimming with vibrant fruit. Notes of blackcurrant intertwine with a whisper of cassis, offering a rich and inviting bouquet. The palate is equally expressive, with bold fruit cascading into soft yet full tannins and a trace of nutmeg. A graceful yet spirited character carries through to a lingering finish, where medium tannins provide structure and poise. The nuanced use of oak softens the tannins and imparts a delicate trace of vanilla that endures long after the sip. Impeccably balanced, this wine complements grilled and roasted meats, pasta, and wild game. Dry-rubbed chicken is a perfect match. It also pairs beautifully with a variety of roasted or vegetables.     A symphony of bright beautiful Bordeaux berries

    With the fifth impressive vintage of this red blend, Merlot takes the conductor’s stand, leading a bold ensemble of Cabernet Franc, Cabernet Sauvignon, and Petit Verdot in a concerto of flavor. Together, they perform a rich, symphonic composition that’s both elegant and expressive. The Merlot brings depth and grace, while the Cabernets weave in power and vibrancy. Petit Verdot? It’s the final flourish that brings the whole performance to life. Just look at the exuberant ruby in the glass, and the tone is set. Your senses are greeted by a vivid overture of raspberry, cherry, and strawberry you just picked from the garden.     A Vibrant Revival: Merlot holds a special place at Stone Tower. We not only grow it with an eye towards our Bordeaux-style blends, but also celebrate it through single-varietal expressions. This Wild Boar Cellars Merlot is crafted with fruit we found in Dry Creek, Sonoma, California, and we couldn’t resist bringing it in to create this wine. It is the first Wild Boar Merlot we’ve crafted since 2015. This wine is 100% Merlot, somewhat unique in a world where we so often see it blended with a touch of Cabernet Sauvignon or Cabernet Franc. The result is a wine with purity, elegance, and undeniable charm. In the glass, it glows vibrant ruby red, opening with expressive aromas of strawberry, raspberry, fresh plum, and a touch of vanilla. The palate is polished and refined, offering layers of bright raspberry and vanilla that glide into a soft, long, and luxurious finish. There’s a quiet confidence to this wine, elegant and beautifully balanced. While it’s a delight to sip on its own, this Merlot truly shines at the table.     Compelling and harmonious wine reflects the best of Napa Valley and Walla Walla

    At our estate, we nurture beautiful Cabernet Sauvignon vines that serve as the foundation of our flagship Bordeaux blend, Hogback Mountain, as well as our reserve single-varietal bottlings. While our focus is on estate fruit, every so often, we discover something truly exceptional beyond our vineyard rows. When we do, we can’t resist the opportunity to craft something unique. The last time that happened with Cabernet Sauvignon was in 2018 – until now. For the 2023 vintage, we sourced fruit from two outstanding regions. The majority hails from the iconic Napa Valley, known for its depth and power, while a smaller portion comes from Walla Walla, Washington, prized for its structure and vibrancy. The result is a compelling and harmonious wine that reflects the best of both worlds. In the glass, this Cabernet shows a deep, dark ruby hue. On the nose, a rich medley of blackcurrant and cassis takes the lead, lifted by a whisper of redcurrant. The palate is smooth and inviting, with soft tannins, a touch of baking spice, and notes of mocha and roasted coffee that add depth and intrigue. The finish is long and graceful, echoing with hints of plum and that subtle mocha warmth.     This is the fourth rosé crafted from Nebbiolo – the best so far! When Nebbiolo is mentioned, our minds immediately shift to the kings of red wine, Barolo and Barbaresco. If the reds are the king, is rosé the queen? This wine is intriguing in the glass, glowing with a striking copper hue that hints at something exciting and a bit unusual. It pulls you in with its personality, capturing the fruit’s essence in a way that feels vivid, expressive, and just a little unexpected. The nose is energetic with strawberry, pomegranate, and cranberry. On the palate, we experience an unexpected juiciness and panache, much like a Provence rosé. The wine softens on the finish, and there is an almost satin texture begging for yet another sip. The perfect food pairing? Let’s have some pizza! Choose Margherita or prosciutto and artichoke.     Meet the 2025 Wild Boar Cellars Blaufränkisch Rosé—our first outing with this Austrian-German varietal. It is ready to steal the show this summer! Hold the glass to admire the pretty pink color. The nose bursts with raspberry and cranberry, then throws in a splash of fruit punch and bubble gum just to keep things interesting— seriously fun from the first sniff. Take a sip, and it levels up: a full, juicy palate packed with red and black fruit, plus a little flash of Maui apple to keep it fresh and lively. Those tropical vibes from the nose stick around through the finish, lifted by a bright touch of acidity that keeps everything smooth and refreshing.   • 2025 Petit Manseng

    This wine is the character at the party that you think is all frosting and no cake until you have a conversation and realize their depth

    This superbly crafted Petit Manseng offers just a hint of sweetness, enough to charm without stealing the spotlight. Fermented and aged entirely in stainless steel, it lets the vineyard’s natural freshness shine bright and clear. It glows a rich medium gold with a platinum halo: the definition of eye candy. The nose is layered and indulgent. Warm baking spices like cinnamon and clove mingle with lemon drop and the unmistakable decadence of pineapple upside-down cake. One sip in, and that luscious pineapple takes center stage, followed by a touch of goldenberry (think guava). It is full-bodied, expressive. The finish is exquisite and long with the pineapple lingering on your tongue. This crafting of Petit Manseng could be one of the best you may experience.     A favorite white wine for the warm sunny days in the Shire

    This wine is a perfect snapshot of the 2025 growing season. Mostly fermented and aged in stainless steel, with just a kiss of neutral oak, it strikes a beautiful balance between purity and polish. The steel keeps the fruit lively and expressive, while the oak gently smooths the edges, no angularity here. Look at this wine, and it is starlight yellow. Lift the glass, and you’re greeted with bright aromas of lime zest, lemon, lemongrass, white peach, and grapefruit. Close your eyes, and suddenly you’re strolling through a dewy meadow at dawn… And yes, there might even be a fawn watching you from the edge of the field.
